Know-how

Our know-how is ancestral, passed down through the generations, and today is part of a heritage of which we are proud.

However, our profession is also evolving. In the life of a vine, or in the gestation of a wine, there are highlights, emblematic stages that remain.

These often translate into actions that cannot be invented... This land that we cultivate is our opportunity.

It is therefore fundamental to respect it and preserve it in order to ensure the future of future generations.

This is why, on a daily basis, we manage our estate using sustainable cultivation and production methods, with a constant concern for product quality and the preservation of this heritage.

With this environmental perspective in mind, the estate was awarded the Terra Vitis label in 2014, a recognition of work that respects the life of our soils and its biodiversity.

In our winemaking process, the harvest arrives whole bunches at the winery. It is therefore 100% manual.

After rigorous sorting, the grapes are processed with the utmost respect: whole grapes, no crushing, static pressing in order to extract the purest juices.

Traditional vinification takes place in stainless steel vats at low temperatures. Temperature control allows us to extract the quintessence of the grape: a maximum of aromas, which are the highest-quality aromatic precursors.

The two fermentations will then take place slowly and naturally: alcoholic first, then malolactic, before joining the oak barrels for a long period of aging...
